Louisiana Easter

What do you cook for Easter Dinner in Louisiana?

Crawfish of course.

Ha Just kidding. We did have the traditional dinner at lunch but later on we did our very first crawfish boil.

I have only tasted crawfish a couple of times. I like the taste but not so much the peeling process. The cooker we were using belongs to Tance. We had the whole crew here to enjoy the many Crawfish we cooked up. I say "we" lightly. Mark and Tance actually did most of the cooking up, which was nice since I did the ham and all the other stuff earlier in the day. Have I ever mentioned that we eat a lot around here. Just checkin. Anyway I got to do this during the cooking for a change.

Here is how the process goes.
First you fill up your ice chest with these critters.
Then you let them crawl on you. Well if you are Charlie you do.
Set up the pot.
You gotta make sure its level.
Then you cook up the sauce.Add some deliciousness and stir.

Throw in some shrimp if you want, we wanted.
Pull your hair up cause its hot! It's Louisiana people!

Cook until it looks like this.

Take it out of the boiler

Pour it on the table

And enjoy with lots of friends and family!

I think Mark could make it on one of those crazy Louisiana shows that are on TV now, dont you?

Thats what we did. It was sooooo much fun.
